  1. The Poolish: In a small jar put 6 tbs water at room temp then add 1/4 tsp active dry yeast and 4 tbs flour. Stir with a metal knife and then cover top with a plastic. Rest for 12-16 hours or overnight. In the morning, with a spoon stir the poolish which is nice and fermented..
  2. In a very big basin add 4 cups water, then add the honey then add the poolish yeast then add the flour little by little of 2 cups while keep on stirring with a spoon.
